The Tomato is actually botanically a fruit, as it has enclosed seeds and comes from a flowering plant, but it is considered a vegetable for culinary purposes. The most common tomatoes are red, with a thin outer skin and a juicy interior that is a network of flesh and edible seeds. Tomatoes have a distinct savoury flavour that varies in sweetness depending on the variety.. There are many other shapes, sizes and colours of tomatoes, with the lighter colours (orange, yellow) being less acidic.

This food is low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Potassium and Manganese.
