Potatoes are starchy tubers from the Nightshade Family. They grow in many shapes, sizes, colours and varieties world-wide. Most popular in North America are the Red, Yellow and White potato, as well as the Russet and Yukon Gold varieties. All potatoes can be baked, boiled or mashed, but the Russet is traditionally the potato used for french-fries and “baked potatoes”.
Health Benefits: Potatoes are a good source of Vitamins B6, C and Potassium, but remember to eat the skin, which is higher in these nutrients and also includes Fibre.
