The Tomato is actually botanically a fruit, as it has enclosed seeds and comes from a flowering plant, but it is considered a vegetable for culinary purposes. The most common tomatoes are red, with a thin outer skin and a juicy interior that is a network of flesh and edible seeds. Tomatoes have a distinct savoury flavour that varies in sweetness depending on the variety.

Popular North American varieties include Beefsteaks (large, meaty and excellent for slicing to eat on burgers), Common Field Tomatoes (grown outdoors), Vine Tomatoes (grown on vines, usually small and perfectly formed), Hot House Tomatoes (grown in green-houses), and the minis: Cherry (round) Tomatoes and Grape (slightly elongated) Tomatoes. There are many other shapes, sizes and colours of tomatoes, with the lighter colours (orange, yellow) being less acidic.
